Cocoa Brownies

I don’t make desserts for myself, I make them for my husband. Why? Because I have to feed him these goodies so he doesn’t lose weight so fast. He can lose 3 pounds in 2 weeks when he only works out 3x a week! He eats junk food and desserts! I’ve been working out 4x a week for 3 weeks and managed to lose 2 pounds only, I don’t eat desserts and junk food (unless it’s Lays!). Life is indeed unfair, therefore, I have to feed him dessert. *evil laugh* BWAHAHAHA:)

I am an instagram-addict. I love seeing pictures of food and happy people. I found a photo of these brownies made by someone I followed — I am so sorry I could not remember who, please let me know if it was you.:) Bon Appetit’s website was mentioned so I went ahead and searched for it. “The best and easiest brownies you’ll ever make” caught my eye, I immediately bookmarked the page.

Months later (fast forward to last Saturday), I was suppose to make my husband Ben & Jerry’s brownies but lacked an ingredient so I searched for the brownies I have bookmarked.

I followed the recipe [as much as I could] and it was very yummy, a bit sweet for me but overall really good! The brownies were chewy and they stick to your teeth! We love those kinds of brownies, the ones which won’t allow us to smile right after we take a bite!

It is the easiest brownies I have made [from scratch]! Yes, I bought mixes in the past–Ginger Evans’ products are tasty!!

First, I pre-heated the oven to 165C, got my bakeware, covered it with foil then sprayed PAM on the foil. Next, I measured everything before I start mixing so everything will be easy to pour/add in later.

I heated my butter in a microwaveable measuring cup for about 10 seconds, set that aside. Then, I mixed cocoa, sugar and salt in a bowl.

Next, I poured the cooled butter to the bowl of cocoa-mix while whisking at the same time. Then, I poured in vanilla and one of the eggs, whisking like crazy for about 30 seconds then added the other egg and whisked again.

Lastly, I added the flour and mixed until everything was combined. The recipe tells us not to over-mix.

Scraped everything out of the bowl and into the foil-covered bakeware and used a spatula to make the top smooth…as smooth as I could!:)

Placed it into the oven and cooked for 36 minutes. The recipe said 25-30 minutes but there were no cracks yet so I continued to cook. I guess all ovens are different! Next time I will try it with a higher temp setting and report back to you.

My husband was thanking God that I had become his wife — so the brownies were good! We also brought some brownies over to Mom’s for Sunday lunch and my little sisters and niece were so glad I brought them dessert!:)

Recipe from Bon Appetit

(Prep Time: 15 minutes | Cooking Time: at least 25 minutes)

  • 1 1/4 cups Sugar
  • 3/4 cup Cocoa Powder
  • 1/2 tsp Salt
  • 1/2 cup Butter, melted
  • 1 teaspoon Vanilla extract
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • Cooking spray or butter for bakeware/foil
  • Pre-heat oven to 165C.
  1. Spray cooking spray onto a foiled bakeware OR grease your bakeware using butter or cooking spray) if you don’t have foil and just have your bakeware.
  2. Melt butter and set aside.
  3. Combine sugar, cocoa and salt in a bowl.
  4. Pour butter into cocoa mix while whisking.
  5. Add vanilla extract and one egg then whisk like crazy.
  6. Add the other egg and whisk like crazy (again).
  7. Add flour until just combined.
  8. Pour batter to bakeware and smoothen top.
  9. Bake for at least 25 minutes or until top cracks.
  10. Let brownies cool before cutting into it.
